EPICALLY CHEAP MEAT BARS
Do you love the convenience of paleo jerky and the new “meat bars” that are now being stocked on store shelves but hate the cost?
If you have a dehydrator and a few minutes to spare I can show you how to create your own delicious version at home for pennies on the dollar…
Basic Ingredients: 1-2 lbs ground meat of your choice (elk, bison, turkey, cow or chicken) 1/2 of Oil to pound of meat (olive, toasted sesame, coconut)
Seasoning: You can go simple with things like salt, pepper or garlic or get fancy with nuts, dried fruits and garden herbs Some of my favorite combos are: Garden sage, onions and pecan pieces Ginger, fresh garlic and cashews Pinenuts and dried cherries breakfast sausage seasoning Dried apricot and walnuts Curry spice and pistachios with raisins
Directions: Mix ingredients in bowl with hands singing and giving thanks to your totally awesome tasting meat bars (the singing really adds flavor!) Press the meat bars into any shape you wish. You can use cookie cutters or just keep it simple. I like my bars a little bit thicker (1/2 inch) this keeps them from becoming to dry in the dehydrator. Place into a dehydrator for 24-32 hours at the highest temperature (145º). Test your bars at the 24 hour mark they should still be moist enough to enjoy but dry enough to store. This step may take a few batches to perfect to your liking…If you like your bars more moist you can add more oil as well.
Special tip: The bars will still be warm and off gassing moister when you pull them from the dehydrator. I recommend wrapping each one in a towel and placing them in a bag that does not close this will keep them from getting wet from the moisture and humidity
